- 1 lb. round steak (beef, or flank steak, sliced lengthwise into 2½ inch wide pieces and then crosswise, against the grain into ⅛ inch thick slices. Try freezing the beef for an hour or two to firm it up for easier slicing.)
- 3 Tbsp. soy sauce (plus 1 teaspoon, divided, available gluten-free)
- 5 tsp. brown sugar (divided)
- 4 tsp. cornstarch
- 7 Tbsp. peanut oil (5–, canola or corn oil, divided)
- 2 Tbsp. rice wine (or dry sherry)
- 1 Tbsp. hoisin sauce (available gluten-free)
- 1 tsp. sesame oil (Chinese or Japanese)
- 8 cups broccoli florets (bite-sized, from 2 crowns)
- 1 tsp. kosher salt
- 1/2 tsp. sugar
- 4 tsp. chinese rice wine (or substitute dry sherry)
- 5 Tbsp. water
- 1 onion (small, peeled, halved and thinly sliced)
- 4 tsp. ginger root (finely minced)
- 1 Tbsp. minced garlic (from 2 large cloves)
- 1/2 tsp. crushed red pepper flakes
