Needed a quick dinner for the guys and only had some linguisa, and boy did they chow this down! I used fresh potato’s & fried them up a bit before I added them to the garlic & onion. I diced up the linguica and I drained it before I added it to the potato mix. I used both cheddar and fresh mozzarella for a little extra cheesiness. All together this was a winner and will definitely make this again.
