Packed with flavor and texture! (I added chicken.) I also added extra balsamic, mustard and salt to make the ratio to olive oil suit our palettes. This is a great salad to make ahead and serve later.

So tasty! Perfect for the fall days that still have a little summer lingering.
I made it super easy for myself and bought the packaged Pom pomegranate seeds and cubed ready to roast butternut squash. Came together really easy this way.
I made two batches because I took one to a party. Don’t skip the step of massaging the kale with half the dressing- I did it for one batch and not the other and it made a big difference!
