  • 1/4 cup Massaman curry paste (homemade or commercial)
  • 3 pounds butternut squash (cubed, about 1 large squash)
  • 1 3/4 cups chickpeas (cooked, rinsed and drained)
  • 1 small onion (sliced)
  • 1/2 pound kale (stems removed and torn into bite-sized pieces)
  • 1/2 cup peanuts
  • 3 scallions (chopped)

    I really liked it but the squash took longer than 12 minutes to soften. More like 30 minutes. Also is it 2-14 oz can of coconut milk. On the Yummly app it say only 1 but on your website says 2. Maybe that is why my squash took so long to soften, there wasn’t enough liquid. Love the flavor. I also added some cut up celery.
