Awesome! I stirred in some sour cream before topping with cheese, used salsa in place of the tomato, and added olives. Nearly quadrupled the squash, used a whole can of corn, and doubled the cheese for four very generous portions. Seems like a very flexible and forgiving recipe!

delicious! 1/2 cup salsa instead of tomato and no cheese. ate as a side with lime cilantro grilled chicken.

great base receipe to start with, you can add your favorite items after.
i added a dollop of plain yogurt and avocado chunks.

This was amazing!! I was hesitant about putting so much lime juice in this but it makes the entire dish! I would definitely double this next time for leftovers.

Has a good flavor, but came out a bit dry. might try a bit of salsa just for some liquid. Will try it again.
