I had lentils on hand so searched for recipes and came across this one. It worked perfectly since I also had a butternut squash that needed to be cooked, along with some carrots. I added more lentils and homemade veggie stock since I added carrots. This was a great, easy recipe and met our soup craving!

This soup is delicious!!!! I did do a variation the second time. I made it in the crockpot and I added a small can of French onion soup. 5 Stars!!

I loved this! Used less coriander and cumin for hubby, and poblano instead of chili peppers. Would love to make it a la original recipe and see how that is! Easy recipe, good cozy winter food! Still had a mild bite as I made it.
