I like this recipe and used it as a base to build a meal. I added pepitas and shallots and served it over pasta. Yum!

I love sautéed kale and the butternut squash was a nice addition. I’m one to alter recipes to my taste and keep it simple, so I sautéed fresh garlic in olive oil, then threw in the kale and some sea salt. Then I removed the kale, added a little salted butter, tossed in the squash, and just used a little smoked paprika instead of chili powder (I really wasn’t in the mood for the cumin flavor since I eat Mexican Food all the time). It was delicious!

i changed the recipe up a bit it didnt say to add anything when searing the kale so i added garlic salt and pepper and it came out divine and instead of chilli flakes to the butternut i added a masala spice blend has a nice bite definately will be making more

So delicious! Used broth to cook vegies rather oil turned out perfect. Need to double recipe next time since we gobbled it up.
