- 1 butternut squash (approx 1kg)
- 300 grams risotto rice (short grain, arborio or other)
- 1 onion (finely chopped)
- 2 garlic cloves (finely chopped or minced)
- 30 grams unsalted butter
- 40 grams Parmesan
- 2 tsp. smoked paprika
- 125 grams chorizo sausage (I use dried kind for this dish but you can use fresh chorizo if you prefer)
- 1 chicken stock (from cube is fine)
- 1 bunch parsley
