- 1 onion (large, diced)
- 4 cloves garlic (pressed through garlic press)
- 1 tsp. italian seasoning
- salt
- black pepper
- 2 lb. butternut squash (peeled and diced, or cubed, I buy pre-cut butternut squash in the prepared foods section for convenience)
- 3 1/2 cups chicken stock
- 15 oz. navy beans (organic, drained and well-rinsed)
- 2 cups chicken (cooked and shredded, you can use rotisserie chicken for convenience, or *see note below)
- 1 cup baby spinach leaves (fresh)
- 1 Tbsp. flat leaf parsley (chopped)
- lemon (Squeeze, about 1 teaspoon worth)
