Excellent! I could ear this everyday. Takes a while, but totally worth the stirring. So creamy!

I might be biased because I love risotto, but this is so good! I deglazed the rice with white wine before adding the broth

Absolutely delicious! It takes longer than 45 minutes. About 15 to chop the squash and an additional hour to cook. I will definitely make this again!

Yes Butternut squash is delicious. This was a big surprise, just wanted something different. It is some work to peel Butternut squash but worth the taste. I froze the other half of squash so next time I make this dish it will be easy.

Very tasty! I halved the recipe and added chicken bacon, just because it needed to be cooked. I didn’t have cream so added 2% milk. It was still creamy and oh, so good! I will make this for my family once we get together post Covid.

Wonderful! By far, one of the best risottos that I have had and simple to make. Well liked by everyone in the family, including the 1- and 3-year-olds. Will be making again.

Great! Didn’t have turmeric, or broth. We substituted the broth with a tea, oil, cayenne pepper recipe. The flavor was amazing! Could be made vegan, definitely get the exact rice. Otherwise it comes out al dente. Picture is next to a cauliflower steak.

This is such an amazing dish!! My first time ever making risotto and my SO ( who is a risotto fanatic) loved it! :-) Highly recommend, especially for those who are new to making this complex dish.
