- 6 cups butternut squash (cubed)
- 1 cup quinoa (uncooked, + 2 cups water, 3 cups cooked)
- 2 cups corn
- 15 oz. black beans (a little more than a cup, drained and rinsed)
- 1 Tbsp. cumin
- 1 lime (juiced)
- salt
- pepper
- 1 tomato (chopped)
- 1 avocado (diced)
- 2 cups cheddar cheese (non-dairy cheese if vegan)
- salsa (or hot sauce, optional, for serving)

Was very filling, deff enjoyed! I used half the amount of butternut squash and about 3x the spices, 1.5 limes; plus I added garlic & chili flakes. Topped it off in a bowl with avocado, cotija, and Smokey salsa!

It turned out okey actually. I am just a bit disappointed with the flavouring, which I am sure someone with more experience in Mexican dishes and flavours, would easily have rectified.

Amazing I sautéed some diced smoked duck breast in with the onions and added power greens . Topped it off with sour cream salsa and a sprinkle of tajin and don’t forget the habasco!!!

Turned out well. I did like it but it made a ton of leftovers and I didn't care for it warmed up as much so idk if I qould make it again

This was so flavorful! I stuck to the ingredients for the most part but changes a few things for what I already had in my fridge and it was delicious. I would suggest adding hot sauce.

This was good, almost very good. I added salsa and I think next time I will add some sour cream as well. Maybe some cilantro to top it off.

I thought it was amazing, but my husband was not impressed, he is not a big fan of quinoa or squash. Kids thought it was okay.
