- 1 bunch kale (stems removed, and chopped )
- 4 tortillas (medium)
- 4 oz. goat cheese
- 1 rotisserie chicken (meat shredded)
- 4 oz. mozzarella cheese (thinly sliced if using fresh, or grated)
- fresh thyme (or micro greens, optional, for garnish)
