- 2 cups elbow macaroni (I used whole grain, any kind will work, 8 ounces)
- 1 Tbsp. unsalted butter
- 1 1/2 cups yellow onion (thinly sliced, 1/8-inch)
- 4 cups butternut squash (cubed, 1/2-inch)
- 5 cups chicken broth (or vegetable broth)
- 3/4 cup reduced fat milk
- 1 tsp. kosher salt (more to taste)
- 1 cup cheese (shredded,, I used sharp cheddar, chose your favorite)
- black pepper (freshly ground, to taste)
- 1/4 cup whole wheat panko (breadcrumbs)
- parsley (chopped for garnish, optional)

Made this for a new twist on Mac n cheese and it’s “fallish” - the sauce is so delicious I could eat it alone as a creamy soup!
My 17 yr old took one bit and was like “that’s some good Mac n cheese” def a keeper for the recipe file!!!

So yummy. The panko at the end really adds a nice touch. The whole family enjoyed it.

This is AMAZING. I was looking for a good way to get my toddlers to eat the butternut squash I bought on a whim and this recipe worked well. They ate all of it (I think they might have called it a favorite if it didn’t have the onion flavor). As for me, the carmelized onions and crunch of the panko made this a super delish savory dish.
I made this exactly as called for except I doubled the cheese. It was perfectly creamy. You could definitely add more panko if you like crunchies, but I liked it as is. Will definitely make again!
