- 4 chicken breasts (small or 3 medium, skinless, diced)
- 1/2 apple (large bramley, or another sour variety, use 1 apple if small, peeled, cored, cubed)
- 1/2 cup red lentils
- 120 mL coconut milk
- 1/2 cup water
- 1 onion (large, roughly chopped)
- 4 garlic cloves (roughly chopped)
- 2 Tbsp. fresh ginger (chopped)
- 1/2 chilli (chopped)
- 1 bay leaf
- 5 cardamom seeds (green)
- 1 tsp. turmeric (each garam masala, and coriander powders)
- 1 cumin powder (level tablespoon)
- 1 sea salt (level teaspoon)
- 6 Tbsp. olive oil
- 6 Tbsp. fresh coriander (finely chopped)
- toasted pumpkin seeds (for sprinkling on top optional)
