this is amazing, even my kids eat this who are fussy eaters although they will still have natural yoghurt on theirs too, but they tend to ask for 2nds even 3rds. Best enchiladas ever.

Great! Used a little less sauce. In addition to cilantro and toasted pumpkin seeds, we added non-fat yogurt as a topper.
