- 1 butternut squash (roasted, to roast, cut into quarters, put cut sides down on a parchment lined baking sheet, and put in into a 400 degree oven for 30 minutes or until you can pierce with a fork)
- 2 Tbsp. olive oil
- 1 red onion (small, chopped)
- 2 cloves garlic (minced)
- 1/4 cup chili powder
- 1 Tbsp. cumin
- 1 tsp. crushed red pepper
- 1 red bell pepper (seeded and cut into bite sized pieces)
- 1 zucchini (small , cut into bite sized pieces)
- 796 mL diced tomatoes (with liquid)
- 540 mL black beans (drained)
- 2 chipotle peppers (seeded and diced)
- 2 Tbsp. adobo sauce (from the chipotle peppers)
- 1 lime
- salt
- pepper
- chopped fresh cilantro (or parsley, for garnish, optional)
