- 2 eggs (separated)
- 2 cups buttermilk
- oil (1/3 cup veg.)
- 1/2 tsp. almond extract (or 1 tbsp amaretto)
- 1 1/2 cups flour
- 1/2 cup cornstarch
- 1 Tbsp. baking powder
- 1/2 tsp. salt
- 3 Tbsp. sugar

Directions
- Beat yolks, buttermilk, oil, and almond to combine
- Whisk flour, cornstarch, baking powder, salt. Set aside.
- Combine eggs whites with sugar and whip into stiff peaks.
- Stir liquid into flour mixture (leave lumpy) then fold egg whites, do not deflate
- Pour onto waffle maker.
