Simple, quick and kid approved. Added almond extract, love that, and extra salt since I didn’t use the salted butter.

I used the lemon to make buttermilk. This recipe produced the best pancakes I’ve ever made! Light, fluffy, tasty pancakes like you’d get at the 50 year old diner!!

Followed the recipe except for the butter. I used salted butter as one other reviewer did. This recipe was a hit with my family and they are tough pancake critics. Made them in a cast iron skillet and put a little bit of butter in the skillet after each pancake made. That helped add a little crisp around the edges. Will make again!!!

Turned out great. To make them even better, cook them on a cast iron skillet on med high heat with lots of butter. I used salted butter instead of the unsalted butter, and could not discern anything detrimental.
