- 1 1/2 lb. pork bones
- 2 lb. beef shank
- 1 lb. pork hocks (sliced)
- 6 stalks lemongrass (washed)
- 1/4 pineapple (peeled)
- 1 daikon (peeled, cut into thick rounds)
- 1 onion (large, or 2 medium, cooked in microwave for 3 minutes)
- 2 garlic cloves
- 1/2 tsp. pepper
- 2 Tbsp. salt
- 0.7 oz. rock sugar
- 2 Tbsp. shrimp paste
- 1/2 cup minced shallot
- 1/2 cup lemongrass (minced)
- 1/4 cup minced garlic
- 1/2 Tbsp. paprika
- chili flakes (to taste)
- 1 Tbsp. annatto seed
- 1/2 Tbsp. sugar
- 1/2 tsp. salt
- 1/2 cup oil
- noodle (Fresh, If using dried noodle, cook following to the instructions)
- Vietnamese coriander (rau răm, washed, finely chopped)
- sliced onion (soaked in cold water, rinse well)
- cabbage (Sliced, soaked in cold water, rinse well)
- banana blossom (Sliced, soaked in cold water mixed with lemon juice, rinse well)
- bean sprout (washed, rinse well)
- green onion (washed, finely chopped)
- cilantro (washed, finely chopped)
- ham (Vietnamese, optional)
- 8 qt. stock
