  • 1 pound pork hocks (sliced)
  • 6 stalks lemongrass (washed)
  • 1/4 pineapple (peeled)
  • 1 daikon (peeled, cut into thick rounds)
  • 1 onion (large, or 2 medium, cooked in microwave for 3 minutes)
  • 2 garlic cloves
  • 1/2 teaspoon pepper
  • 2 tablespoons salt
  • 0.7 ounces rock sugar
  • 2 tablespoons shrimp paste
  • 1/2 cup minced shallot
  • 1/2 cup lemongrass (minced)
  • 1/4 cup minced garlic
  • 1/2 tablespoon paprika
  • chili flakes (to taste)
  • 1 tablespoon annatto seed
  • 1/2 tablespoon sugar
  • 1/2 teaspoon salt
  • 1/2 cup oil
  • noodle (Fresh, If using dried noodle, cook following to the instructions)
  • Vietnamese coriander (rau răm, washed, finely chopped)
