- 2 cups bulgur (fine)
- 1/2 cup semolina (if not available, substitute with all-purpose flour, but semolina is preferred)
- 2 cups hot water (to soak bulgur)
- 1/2 lb. ground beef
- 1 cup chopped walnuts (finely)
- 1 onion (medium, grated)
- 1 egg
- 1 Tbsp. sweet red pepper
- 1 Tbsp. tomato paste
- 1 tsp. salt
- ground black pepper
- ground cumin (to taste, do not overdo)
- 1 cup corn oil (to fry)
- 2 tomatoes (medium ripe, peeled and pureed, if the tomatoes are not ripe and juicy, add 1 tablespoon tomato paste to the sauce as well)
- 2 Tbsp. olive oil
- 2 garlic (gloves, peeled and crushed)
- 1 tsp. dried mint (finely crushed, or basil)
- salt
- pepper
- 1 cup walnut (finely chopped)
