- 1 cup mayonnaise
- 2 Tbsp. brine (kimchi)
- 1/2 cup kimchi (finely diced, 100g)
- 1 tsp. sugar
- 1 Tbsp. toasted sesame oil
- 1 garlic clove (small, grated or minced, about 4g)
- 2 scallions (finely chopped, about 40g)
- 1 1/2 lb. ground beef chuck (fresh, about 80% lean)
