It turned out great but instead of Buffalo and blue cheese I made it into a southwest zucchini boat by substituting medium taco sauce, adding chunky salsa and cilantro. I baked as directed and topped it off with mexican cheese.

Easy! Tastes amazing. I used a sharp white cheddar cheese on some instead of blue cheese and still tastes great. Made for a football game but now want to make it for anytime!

These were a big hit for me!
They only had 3 zucchini at the store so I bought 3 of those long yellow squash as well. The yellow squash was harder to get the insides out, and more 'fragile' but I liked the taste better so I'll be using those again in the future.
