- 1 Tbsp. olive oil
- 1 tsp. paprika
- 1 Tbsp. cayenne
- salt and ground black pepper
- cooking spray
- 1 Tbsp. margarine (light)
- 2 Tbsp. salsa (prepared spicy)
- 4 Tbsp. blue cheese (crumbled)
- 4 Tbsp. light sour cream
- 1 scallion (stalk, minced)
- salt and ground black pepper
- 2 sandwich rolls (or baguettes)
- 2 leaves lettuce

Directions
- Mix the chicken with the olive oil, paprika, cayenne, salt, and pepper.
- Spritz a skillet with cooking spray and saute the chicken, turning to cook on all sides. Remove from skillet and set aside.
- Make the dressing by mixing together the blue cheese, scallion, sour cream, salt, and pepper.
- Melt the butter in the microwave and mix with the salsa. Dip the chicken into the mixture to coat.
- Cut the bread open and fill with the chicken. Top with a piece of lettuce and drizzle with dressing.
