- 1 onion (large, diced)
- 1 1/4 lb. beef (chuck, sirloin or good quality stew meat, trimmed of extra fat and cut into 1/2″ to 3/4″ thick pieces)
- 3 large carrots (julienned)
- 2 1/2 cups buckwheat groats (aka grechka)
- 1 cup hot water
- 4 1/4 cups filtered water
- 2 tsp. salt (and 1/4 tsp black pepper, or to taste, I use sea salt)
- 1 tsp. spice (cumin, to taste)
- 1 garlic (full head of unpeeled)
