I don’t like leaving “non-positive” reviews but in this case I’m making an exception. I love trying muffin recipes that are low sugar and use oat bran. This recipe appealed to me because it also included buckwheat groats and zucchini. I made this recipe exactly as written (and even let the grated zucchini sit in a colander to release its excess liquid). Recipe was a fail. As recommended I amped up the sweetness factor by adding 1/4 tsp stevia powder, and even sprinkled the top with cinnamon sugar. Nasty! The muffins were sunken, overly moist, gummy and flavourless. This is the first healthy muffin recipe I’ve tried that was, well, inedible 🙁. Like I mentioned I normally wouldn’t leave a negative review but with the skyrocketing price of baking ingredients I thought I’d let you know how this turned out for me. I usually give the reviews some attention before trying a recipe and find them helpful especially if someone actually made the recipe without changing it.
