- 1/3 cup Dutch-processed cocoa (I use Saco dutch/natural blend)
- 1/2 cup boiling water
- 2 oz. unsweetened chocolate (finely chopped, I use Baker’s squares)
- 4 Tbsp. unsalted butter (melted)
- 1/2 cup oil (I usually use corn or canola)
- 2 large eggs
- 2 large egg yolks
- 2 tsp. pure vanilla extract
- 2 1/2 cups sugar
- 1 3/4 cups all purpose gluten free flour blend (good quality)
- 1/2 tsp. xanthan gum (omit if your flour blend already has xanthan or guar gum)
- 3/4 tsp. table salt
- 3/4 cup creamy peanut butter (I used Jif Natural)
- 1/2 cup unsalted butter
- 1/8 tsp. salt
- 2 1/4 cups powdered sugar
- 2 Tbsp. whole milk (or half & half)
- 1 tsp. vanilla extract
- 1 1/2 cups semi sweet chocolate chips
- 1/3 cup creamy peanut butter (I used Jif Natural)
