delicious and easy. i didn't use sweet potato as i dont like them that much but worked just fine with Brussel sprouts and butternut squash.

I made a double recipe for a big party tomorrow. I added a bit of honey to the sauce for added sweetness and it came out great. I’ll let you know what the guests think.

Loved it-doubled the dressing because I used more vegetables than in recipe-omitted sweet potatoes. Will make again!

A fantastic recipe!
Doubled up on ingredients
I cooked for 40 minutes@400deg(tossed every 10min)
Used Grapeseed oil on pan.
Made own dressing:
2 tbsp olive oil
2 tbsp white vinegar
4 tbsp yellow mustard
1 tsp bell pepper powder
1/2 tsp onion powder

UuhhhhhhMAZING. Too easy. So delicious.
I added a few extra Brussels and a little more crushed red pepper, and it was still amazing! My fiancé loved it too! Definitely making this for the next holiday dinner

I tossed it in the oil and spices (more salt & pepper, plus garlic powder) and roasted for 35-40 min, flipping halfway. Could add any other veg you have on hand! Made a tangy spicy Dijon sauce instead of just Dijon and oil.

Very tasty! I added one red onion, very thinly sliced, to roast with the vegetables. Well worth the effort of prepping the vegetables and will make this again.
