- 250 grams Brussels sprouts

- 1/2 red onion (very thinly sliced)
- 1 can borlotti beans (230g/8oz drained weight, 1 cup cooked)
- 50 grams sunflower seeds (toasted)
- 1 handful fresh basil (roughly torn)
- 1 handful fresh parsley (roughly chopped)
- shaved Parmesan cheese (see notes)
- 125 mL yogurt (full fat)
- 1 Tbsp. white miso (optional but delicious!)
- 1/2 lemon (juiced)
- black pepper (generous pinch fresh)
