- 2 spring onions
- 1 Tbsp. olive oil
- 125 grams mushrooms
- 1/2 green pepper
- 1/2 red pepper
- 1 garlic (fat clove, crushed)
- 1/2 tsp. smoked paprika
- salt
- pepper
- chives (or parsley, snipped with scissors)
- 175 grams firm silken tofu (half a pack of most brands)
- 2 Tbsp. nutritional yeast flakes
- 1/4 cup chickpea flour (also known as gram or besan flour)
- 1 1/2 tsp. cornflour (or arrowroot)
- 1/4 tsp. turmeric
- 1 pinch smoked paprika
- 1/2 tsp. salt (Himalayan black, pink, this adds a more eggy flavour - OR regular salt)
- 1 Tbsp. olive oil (plus a little for frying)
- 3 Tbsp. aquafaba (see above - chickpea brine from a tin of chickpeas or other white beans)
