  • 3 cups brown rice (cooked, let cool to room temperature if you're cooking rice especially for the salad)
  • 1 cup carrots (shredded or matchstick, coarsely chopped)
  • 1/4 cup green onions (thinly sliced)
  • 1/2 cup chopped parsley (I used flat Italian parsley, but curly parsley will work)
  • 2 1/2 tablespoons lemon juice (fresh-squeezed)
  • 1 teaspoon ground cumin
  • 1/4 teaspoon ground coriander
  • 1 pinch cayenn ground pepper (could also use a dash of hot sauce)
  • 4 tablespoons extra-virgin olive oil
  • black ground pepper
  • salt
  • 1/4 cup toasted pine nuts (lightly, or use other nuts of your choice)
