- 3 small carrots (shaved with a vegetable peeler)
- 1 cup sugar snap peas (sliced)
- 2 Tbsp. sesame seeds (more for serving)
- 1/2 cup sesame (Toasted, and Miso Dressing, below)
- 1 cup brown rice (short-grain, rinsed)
- sea salt
- 2 Tbsp. fresh cilantro leaves (chopped, more for serving)
- 1 can beans (adzuki or small read, rinsed)
- 2 avocados (sliced)
- 1 red chile (small fresh, sliced)
- 1/4 cup white miso
- 1/3 cup rice vinegar
- 1/4 cup canola oil (I used olive oil)
- 1/4 cup low sodium soy sauce (I used tamari)
- 1 Tbsp. toasted sesame oil
