- 1/4 cup warm water
- 2 Tbsp. lime juice (freshly squeezed)
- 1 Tbsp. soy sauce
- 1 Tbsp. rice vinegar
- 2 tsp. fresh ginger root (finely grated)
- 1 tsp. Sriracha sauce
- 2 oz. brown rice noodles (dried)
- 8 rice paper wrappers ( round brown, plus extra for any mistakes!)
- 1 lb. cooked shrimp (deveined and peeled)
- 1 1/2 cups red cabbage (thinly sliced, roughly 1/4 of one small head of red cabbage)
- 1 red bell pepper (or large orange, yellow, sliced into thin strips)
- 1 avocado (ripe, pitted and sliced)
