I did a Gluten-Free and Low-Glycemic Autumn version of this cake and it turned out lovely.
Substitutes:
Favorite Gluten-Free All Purpose Mix for Flour
Coconut Palm Sugar for Sugar
1 tsp of Vanilla Extract
3 tsp Pumpkin Spice Extract
Voila! An awe inspiring Autumn delight...pairs magnificently with a hot cup of your favorite coffee. ;)
