here is how i did it. cook the lasagna noodles according to package instructions. heat olive oil in saute pan over medium heat. slice the garlic in thin slices. give spinach a rough chop. saute garlic for 2-3 minutes until it just starts to turn golden then add the spinach. salt and pepper to taste and saute until spinach is wilted. i add crushed red pepper too. toss the noodles and parmeggiano reggiano with the spinach and garlic. plate three noodles for each serving. i also crumbled some ricotta cheese into it.
