- 2 cups mushrooms (chopped)

Directions
- Add oil to frying pan over low heat. Add mushrooms to the pan and fry for 5-7 minutes or until lightly browned.
- Beat eggs, egg whites, and black pepper in a mixing bowl.
- Once the mushrooms are nicely browned, add the fresh spinach to the pan for roughly one minute or until just wilted
