  • 1 pound white mushrooms (or brown, sliced)
  • 1 tablespoon olive oil
  • 4 cups broccoli florets (cut into fairly small pieces)
  • 2 cups ham (diced, if making this for the South Beach Diet, use lean ham with not more than 10% fat)
  • 2 cups low-fat cheese (grated, I used Four Cheese Mexican Blend)
  • 12 eggs
  • 1 teaspoon Spike Seasoning (or your favorite all-purpose seasoning that's good with eggs)
  • black ground pepper (fresh, to taste)

    It was good, but a little goes a long way. If I make it again, I will put less of each ingredient in, as it was jam packed with mushrooms, ham and broccoli.
