- 5 cups broccoli florets (tiny, and chopped stalks if you like)
- 1 garlic clove (smashed and chopped)
- 1/2 tsp. fine grain sea salt
- 1/4 cup almond butter
- 3 Tbsp. lemon juice (freshly squeezed)
- 1 tsp. honey
- 2 Tbsp. extra-virgin olive oil
- 2 Tbsp. hot water
- 2 apples (small crisp, cut into bit-sized pieces, if you aren't going to use the apples immediately, let them sit in a bowl of water with the juice of 1/2 a lemon)
- 1/2 red onion (small, thinly sliced)
- 1/2 cup candied walnuts (or toasted, or almonds)
- 1/3 cup shallots (pan-fried crunchy)

Kept the salad 100% raw and used agave instead of honey to make it vegan. Added a dash of apple cider vinegar to help thin out dressing. The recipe overall is incredible. Will definitely make again!

A very tasty veggie salad - I added some shredded carrots and a bell pepper. I also steamed broccoli a bit.
