- 1 1/2 cups strawberries (chopped fresh, I added more once the recipe was put together)
- 1 1/2 cups broccoli (chopped fresh)
- 1/4 cup salted cashews (halves, I don't care for nuts so I subbed chickpeas Next time I'll roast them)
- 1/4 cup red onion (finely chopped)
- 2 oz. Monterey Jack cheese (subbed a Mexican Blend)
- dressing
- 2 Tbsp. low fat greek yogurt
- 1 Tbsp. honey
- 1 Tbsp. balsamic vinegar
