    This was excellent and easy to make! I tweaked it a little bit by adding some leftover cauliflower as well, and used cream instead of coconut milk due to dietary restrictions. To compensate for the missing sweetness, I added some honey to balance the flavours, and served it with a sprinkling of fresh Parmesan and a dollop of sour cream. I doubled the recipe as well, and am overjoyed that I will have leftovers! Fabulous soup and a huge hit!
