- 1 Tbsp. olive oil
- 1 broccoli (head, cut into florets)
- 1 small yellow onion (diced)
- 3 cloves garlic (minced)
- 1/4 cup fresh spinach leaves
- 8 grape tomatoes (– 10)

Directions
- In a pot of boiling water, add the orzo and cook for 6 – 8 minutes. Drain and set aside.
- Heat a skillet on medium heat. Add the oil and cook until warm.
- Begin by adding the onions and soften for 3 – 4 minutes.
