The recipe said it was for one sandwich so i made a huge batch for my family. I have a lot leftover and may use it as an omelet filling or mix it up for a frittata.
A good way to get veggies

A bit time consuming to make but delicious! If you have a panini maker it may be a lot easier to use that.
