Delicious! I've made this dish several times already because both my boyfriend and I love it. Its easy to customize and a great way to get loads of nutrition without feeling like you're sacrificing flavor. I sometime make this with just kale and spinach. Sometimes I also add 1/4 cup of amaranth to 3/4 cup of rice. Also really good with some squeezed lemon juice and extra pepper for a bite. I've added chorizo before in place of bacon or ham, added green peas, etc. Any variations would work.
