- 1/2 chopped onion (medium)
- 1/4 cup all purpose flour (or swap out All-Purpose Gluten Free Flour)
- 2 cups milk (half-and-half, whole, can also be used)
- 4 cups chicken stock (or vegetable broth)
- 1/2 lb. broccoli (fresh, about 3 cups chopped into bite size pieces)
- 1 cup carrot (grated/shredded, about 1–2 large carrots)
- 1 1/2 tsp. sea salt (to taste, watch this, taste before adding salt, cheese can be salty)
- 1/4 tsp. nutmeg (or fresh ground nutmeg)
- black pepper (to taste)
- 8 oz. sharp cheddar (grated, white or yellow cheese, about 2 cups)
