  • 1 tablespoon grapeseed oil (or extra-virgin olive oil)
  • 2 teaspoons minced garlic (2 cloves)
  • 1 cup diced yellow onion
  • 1 teaspoon sea salt (plus more to taste)
  • 1 cup cauliflower florets
  • 3 cups vegetable broth
  • 4 cups broccoli florets (roughly chopped)
  • 1 cup grated Parmesan
  • 1 cup grated sharp cheddar cheese
  • freshly ground black pepper (plus more to serve)

    Directions

    1. In a large saucepan, heat the oil over medium heat and sauté the garlic, onions, and 1/4 teaspoon of the salt for about 5 minutes, until the onions are soft and translucent. Add the cauliflower and vegetable broth, increase the heat to high, and bring just to a boil.
    2. Reduce the heat to medium and simmer covered for about 10 minutes, until the cauliflower is just tender.
    3. Add the broccoli and the remaining 3/4 teaspoon of the salt. (The broth may not completely cover the vegetables but the broccoli will release liquid as it cooks.) Simmer
