This was absolutely delicious!!! I used tri-color quinoa and a little less cheese than recommended, but it was delicious!!!!! I baked them in bite size tins and made two bigger ones in regular muffin tins. These would be great with a soup or by themselves! Doesn’t taste healthy (but it is) but it’s really good!
