Didn’t have much taste, would probably add something a bit spicer to it next time or stronger cheese.

These turned out great! I followed the recipe as is and added the red pepper flakes for a kick. I had tri colored quinoa so that is what I used, but this will be a staple for me now. I freeze them and take 2 out every morning for breakfast. Quick and easy to make

Next time I will probably make it in a casserole dish bc they didn’t hold very well. Other than that, love the recipe!

Great! Took the advice of making sure the cups were packed down well before baking. I also used regular muffin tins instead of mini muffin tins. Great for meal prep!

They were good I also added half a jalapeño for a kick! Only thing I would do differently next time is pack the cups a bit with the back of a spoon. Mine weren’t dense enough and were kinda crumbling instead of a nice firm cup

My husband and kids loved it! I put everything but the quinoa in a food processor to get it small enough. I like spice and was heavy handed with the red pepper, tasted great! Hit with everyone

Pretty good. I forgot the red pepper flakes, so it was a little bland. If/when I make it again I would use all stock to cook the quinoa, double the garlic, make sure to add some red pepper flakes, add more cheese on top and maybe just bake it in a casserole dish instead of as individual cups.

These were OK - I used vegan cheese - these needed hot sauce/bbq sauce and lots more seasoning.

I added cauliflower instead of all broccoli. The recipe did not call for seasoning so if you are just using water to cook the quinoa , do add your own seasoning.

Couldn't stop eating these the entire day. It's great for using up leftover quinoa, cheese, or vegetables.

Yummy! We really enjoyed this. We cooked chicken and paired it with mini broccoli cheddar quinoa bites delish!
