- 2 rib celery (chopped)
- 1 onion (chopped)
- 4 cloves garlic (chopped or sliced)

- 3 sprigs rosemary (chopped, about 2 tablespoons)
- 2 tsp. juniper berries (optional)
- 1 cup red wine (such as Rosso di Montalcino or Montepulciano)
- 4 cups cooked beef brisket (shredded or chopped leftover/)
- 1 lb. rigatoni (with lines, OR wide pasta ribbons, pappardelle)
- 2 Tbsp. butter
- 1 cup grated Parmigiano Reggiano cheese (plus some to pass)
