Brinjal/Eggplant/Aubergine Bhajji. Bhajji are deep fried snacks where the veggies are coated with chilly and gram flour mixture. A perfect savory snack for tea time.

- 1 cup flour (Gram, or garbanzo bean flour)
- 1 tsp. chilli powder
- 3/4 tsp. salt
- 1/4 tsp. baking soda
- 5 brinjals
- oil (for frying)
- 1/4 cup water

Directions
- Heat the kadai and add oil. While the oil is getting hot you can prepare the bhajji batter.
- Mix the besan, red chilli powder, salt and baking soda.
- Mix the 1/4 cup water and make it thick paste. If required add more water. The batter should be in dosa batter consistency.
