- 1 1/2 cups turkey stock
- giblets (optional)
- turkey neck (optional)
- 1 small onion (chopped, optional)
- 1 large carrot (chopped, optional)
- 1 celery stalk (chopped, optional)
- 1 bay leaf (small, optional)
- 3 cups water (optional)
- 3 cups chicken stock (low salt, or broth, canned or homemade, optional)
- 1/2 cup white wine
- 3 cups turkey broth (or chicken broth, plus more if needed)
- 1/4 cup flour
- 4 Tbsp. unsalted butter
- freshly ground black pepper (to taste)
- meat (Reserved cooked turkey neck meat and giblets if desired)
