- 1 1/2 cups turkey stock
- turkey neck (reserved, neck and giblets)
- 1 small onion (chopped)
- 1 large carrot (chopped)
- 1 celery stalk (chopped)
- 1 bay leaf (small)
- 3 cups water
- 3 cups chicken stock (low salt, or canned low sodium chicken broth)
- 1/2 cup white wine
- 3 cups turkey broth (or chicken broth plus more if needed)
- 1/4 cup flour
- 4 Tbsp. unsalted butter
- freshly ground black pepper (to taste)
